The final table being NL Hold'em makes sense a little bit. As because NL Hold'em used to be the most difficult game I think. Before the WSOP became the WSOHold'em, the only event that mattered was the Main Event. It was one of the only $10,000 and that's why it was NL Hold'em.
Of course now it doesn't really stand for all that. It's only so the american public can watch the final table. But if this was done at a time before everyone's Grandmother knew how to play NL Hold'em...then I would say that it made sense.
